You guys, I am so embarrassed to say this, but I have fallen off the Whole30 wagon.
I made it 17 days and then had a slice of pizza.
I loved the Whole30, and I’ve decided that I will try again when I’m back in California.
Until then, I’m just going to hold off because it is so hard being in a house where I’m not in charge of all of the groceries that come through the door.
Additionally, it’s hard when it’s not my kitchen, and I don’t always have time to cook.
Anyways, I tried hard, and I think that this failure will be a good lesson for me to pick myself up and try again when I’m ready.
Until then, I made this AMAZING chia seed pudding. It is delicious, nutritious, and oh so filling!
Chia seeds are high in fiber and omega-3 fatty acids, both of which fight inflammation.
Also, when combined with a liquid, like almond milk, they form a gelatinous mixture that pulls food through our digestive tract.
This pudding is so delicious, and I hope you enjoy it!

This chia seed pudding is so nutritious and delicious! Great for meal planning and eating on-the-go!
- 1/2 cup chia seeds
- 1 cup almond milk
- 1/4 cup honey
- 1/2 tsp. vanilla
- 1 mason jar
- Mix all of the ingredients together in a regular-sized mason jar. Screw the lid on the jar and place it into the refrigerator overnight. In the morning, it should be a gelatinous mixture!
Quick Tip: Add assorted berries in the morning to give it a burst of freshness!
